Event Sweet Treats

I often get asked for my snack and sweet treat recipes at events. I am always happy to share!

Here are a couple of crowd pleasers....


Berry chia jam flapjack slices & chocolate fridge cake.



Blueberry & Blackcurrant Chia Jam Flapjack Bars


Ingredients


  • 180g oat flour (just grind up whole oats)

  • 100g rolled oats

  • 80ml maple syrup

  • 80ml coconut oil

  • 1/4tso salt

  • 1/2tsp vanilla

Chia Jam

  • 300g blueberries

  • 45ml maple syrup

  • 30ml lemon juice

  • 25g chia seeds

  • 1tsp blackcurrant powder (I love Arctic Power Berries)



Method:


  1. Add all the ingredients except for the jam, in a bowl and bring together.

  2. Use approx. 3/4 of the mix to coat the bottom of a lined baking tray- push down firmly and ensure their are no holes.

  3. Put this and the leftover mixture into the fridge whilst you make the chia jam.

  4. Chia jam- add ingredients to a pan and heat slowly. Mash the berries and cook until slightly thickened. Add the blackcurrant powder and stir in.

  5. Pour the jam onto the flapjack base.

  6. Crumble the rest of the mix on top

  7. Cook for around 35mins at 180C (or until golden and crispy).

  8. Allow to cool completely before slicing.



Choc, date, pumpkin seed and goji berry fridge cake


Ingredients


  • 540g of choc of your choosing- I use 2x 75% 2x 85% 1xmilk 46% (can use flavoured choc or choc with nuts if you want)

  • 80g butter

  • 14 dates, chopped

  • handful of goji berries, chopped

  • 115g cashews, chopped

  • 200g of GF digestive biscuits, chopped

  • 45g pumpkin seeds



Method:


  1. Add all the chocolate and the butter to a bain marie and heat slowly until completely melted.

  2. Add all ingredients to a bowl, reserving some of the goji berries, dates and pumpkin seeds (to sprinkle on top).

  3. Line a baking tray, tip the mixture in and smooth out. Add the reserved bits on top and then refrigerate over night.

  4. When completely set, slice.
