These pancakes are super easy, that little bit healthier & gluten free
Oat Pancakes
Ingredients
1 cup rolled oats
1/2 cup milk/ milk alternative (I like Plenish oat milk)
2 eggs
1 tbsp maple syrup (optional)
1 tbsp extra virgin olive oil/ melted butter
1 tsp Gluten free baking powder
1 tsp vanilla essence
1/2 tsp cinnamon/ mixed spice
Pinch salt
Extra virgin olive oil/ butter for frying
Directions
Add all ingredients to a blender and mix into a smooth batter.
Heat a frying pan to medium and add in a thin layer of extra virgin olive oil.
Scoop in about a tbsp of batter, more if you can fit them in.
Fry lightly on each side for a couple of minutes (until golden)
Pat dry with kitchen towel.
Serve with topping of your choice!
