My Go-To (healthier) Pancake Recipe

These pancakes are super easy, that little bit healthier & gluten free




Oat Pancakes


Ingredients


  • 1 cup rolled oats

  • 1/2 cup milk/ milk alternative (I like Plenish oat milk)

  • 2 eggs

  • 1 tbsp maple syrup (optional)

  • 1 tbsp extra virgin olive oil/ melted butter

  • 1 tsp Gluten free baking powder

  • 1 tsp vanilla essence

  • 1/2 tsp cinnamon/ mixed spice

  • Pinch salt

  • Extra virgin olive oil/ butter for frying



Directions


  1. Add all ingredients to a blender and mix into a smooth batter.

  2. Heat a frying pan to medium and add in a thin layer of extra virgin olive oil.

  3. Scoop in about a tbsp of batter, more if you can fit them in.

  4. Fry lightly on each side for a couple of minutes (until golden)

  5. Pat dry with kitchen towel.

  6. Serve with topping of your choice!
