Sushi Rolls- part of my Sensational Seaweeds! Lunch & Learn Event

In April I will be hosting my first in a series of Lunch & Learn events. Starting off with Sensational Seaweeds
I will be talking about the incredible benefits of seaweed and it's culinary uses. Alongside this I will be demonstrating how to make brown rice sushi rolls and miso & tofu soup. Both of which will be eaten for lunch....whilst you learn!
Below is the recipe for my sushi rolls- let me know if you try it!

Brown rice sushi rolls with hummus, avocado & alfalfa sprouts
Ingredients
For the rice:
50g short-grain brown rice
1tsp Miso paste
For the hummus:
1 tin chickpeas
1tsp tahini paste
1 clove garlic
1 tbsp lemon juice
½ tsp cumin powder
1tbsp extra virgin olive oil
Water
Salt to taste
For the sushi roll:
Nori seaweed sushi sheet
Avocado coated in a little lemon juice
Alfalfa
Method:
1. For the rice
2. Cook the rice for around 40 mins. Allow to cool.
3. Add in the miso.
4. For the hummus
5. Place all ingredients in a food processor and process until smooth, adding water if necessary. Season to taste.
6. For the sushi roll
7. Slice the avocado and coat in a little lemon juice.
8. Spread a thin layer of hummus onto the Nori seaweed.
9. Add rice, spread evenly.
10.Add a line of avocado and a line of alfalfa.
11. Carefully roll up the sushi and slice.
You can make so many swaps with this formula, add in more protein or veg.The hummus or something similar is needed to help the brown rice stick to the nori. Nori seaweed (and other sea vegetables) is so good for you, containing many nutrients often lacking in our diets, especially iodine and selenium, essential for, amongst other things, thyroid function.
